Prestigious Wines

We are developing other wines, which, by their composition, their treatment specific and their many qualities, deserve the prestigious qualification. There are four of them, two whites and two reds:

The Sauvignon that you can simply serve during apetizer in "kir", or in accompaniment of shells, seafood or roasted fish;

The Chardonnay, which will accompany your fish and white meats agreeably, but also your blue or goat's milk cheeses;

The Cabernet Sauvignon, which will appreciate aging in cellar, before accompanying game and powerful cheeses;

The Tradition, to conclude, will accompany your meats, game and powerful cheeses.

The Grande Reserve Cabernet Sauvignon and the Tradition 2009 were rewarded : Bronze medal at the Concours des Vignerons Independants 2012.

Sauvignon

This white wine is characterized by a large smoothness, with a gilded robe.
The vines, from which it results, benefit fully from the sunny and moderated microclimate thanks to the marine breezes.

Service :

Out of aperitif: ideally served fresh or in "kir". During the meal: shells, seafood, roasted fish. Temperature of service: about 10°C.

Characteristics :

Color: yellow robe with pale reflections.
Nose: powerful with floral and citrus fruits aromas.
Mouth: attacks with a lot volume, strong onctuousness, sharp finale.

Grapes :

Stock out on Millésime 2014
All year : 100% sauvignon.

Wine making :

Since 2012, wines are made according to organic charter with limiting inputs to keep up the natural qualities of the grapes.
Mechanical harvesting with égrenneur.
Protection of grapes during transport to the winery.
Receiving the grapes in a drainer stainless conquet to separate as soon as possible and limit oxidation juice.
Extraction of musts by pneumatic press with maceration in atmosphere (nitrogen) and controlled temperature.
Settling after cooling to 10°C.
Filtration of lees after maceration and reincorporation of the filtrate for fermentation.
Systematic addition of yeast to clear juice with selected yeasts.
Fermentation regulated between 14 and 18 ° C.

Breeding :

Breeding on dregs with batonnages regular.
Rapid extraction with CO2.
Tangential filtration.
Bottled and stored in the cellar at 14 ° C until shipment.

Distinctions

The small amount of Sauvignon produced that we can not present it to the various competitions. Since the 2011 vintage: 100% organic.

Chardonnay

Chardonnay is a wine characterized by a large smoothness, with a gilded robe. This wine is idealy drank during appetizer or to accompany fish or the white meats.

Service :

During appetizer: ideally served fresh.
During the meal: fish, white meats, poultries or rabbits. Goat's milk cheeses with honey or blue cheeses.
Temperature of service: about 11°C.

Characteristics :

Color: yellow robe with the pale reflections.
Nose: powerful of pineapple, "meringué" biscuits or candy.
Mouth: attacks with a lot of volume, strong unctuousness, finale on “toffee”notes.

Grapes :

All year : 100% Chardonnay.

Wine making :

Mechanical harvesting
Prection grapes during transport to the winery.

Cabernet Sauvignon

This special vintage 100% Cabarnet Sauvignon, of a deep, has an olfactory intensity underlined by the smoothness and the subtlety of its vanilla and ripe fruits flavors, crystallized and spicy.

Well balanced, elegant, velvety, framed without excess with a rather long sap, it can be tasted young. But the secondary bouquet will be expressed only after an ageing in the darkness of a cellar.

  • Temperature of service: young from 12 to 14°C, after ageing 15 to 18°C.
Characteristics :
  • Color: deep robe.
  • Nose: powerful and red fruit end,jam of spices.
  • Mouth: powerful with silky tannins.

Only qualitative years are bottling! This is why we do not have all Years Cabernet Sauvignon and quantities are limited.

Wine making

  • Carbonic semi maceration with control of temperature : juice with 24°C and marc with 29°C.
  • Reassembly by sprinkling and unballasting for burial of the hat of marc, to increase the tanic extraction, the color and the coating of the tannins.
  • Maceration long between 15 days and 1 month.
Breeding :
  • Racking with ventilation before malolactic fermentation.
  • Breeding for 12 months out of barrels of French oak stave wood, source to combine, for 50% of the vintage.
  • Bottled then stored in the wine storehouses with 14°C until forwarding.

Tradition

The red traditon is educated during 12 months in oak barrels French stave wood. This education gives to this wine a flavor and a particular aroma which make its richness. Powerful game and cheeses will make a prefect couple associated with this wine which will develop every flavors.

During the meal: with bulls tenderloin, game or powerful cheeses.
Temperature of service: young from 12 to 14°C, after ageing 15 to 18°C.

Color: deep robe with garnet reflections.
Nose: powerful and red fruit end, jam of spices.
Mouth: powerful with silky tannins. Long finale on wooded notes.

Grapes :

All years : Merlot, Cabernet Sauvignon

Wine making :

Since 2012, wines are made according to organic charter with limiting inputs to keep up the natural qualities of the grapes.

Selecting the parcel sorting of the harvest, total light stalking and crushing.
Carbonic semi maceration with control of temperature: juice with 24°C and marc with 29°C.
